This month has been crazy so far, but hopefully this week will be a little less busy than last week! I'm trying to keep things simple, but I couldn't resist picking up some salmon to make Ming Tsai's salmon cakes tomorrow.
Here's my plan for this week:
Monday - Cocktail Meatballs, Roasted Baby Broccoli
Tuesday - Faroe Islands Salmon Cake, some kind of veggie {my husband doesn't like asparagus so I might sub green beans for the spicy salad that's supposed to go with this dish}
Wednesday - Enchiladas, salad
Thursday - Mapo Tofu, rice, steamed broccoli
Friday - Buffalo Chicken Wings, crudite
Saturday - Spinach and Broccoli Quiche
Sunday - Spicy Shoyu Ramen
