  • Menu Plan Monday: October 27, 2014

    I’ll start with a recap of some new recipes from last week:

    The Brownie Spider Web Cake was another huge hit with my kids! However, the Carrot Loaf Cake was not a hit with anyone, including myself, my kids, and the folks at the small party I brought the slices to – I’m not sure what everyone else thought the problem was, but I just wasn’t into the strong olive oil flavor {and I love olive oil, so go figure}. The new chocolate chip cookie recipe I tried was fine but not terrific and the younger boy doesn’t like them at all, so next time I’ll be back to my favorite chocolate chip cookies.

    I never got to a few of the recipes I intended to make last week, so they’ll be back in rotation this week. Here’s what I’ve got planned for dinners:

    Monday – Japanese-style Salmon Croquettes, some kind of veggie

    Tuesday – Mummy Dogs, crudite with homemade ranch dip

    Wednesday – Beef Pot Pie {using leftover frozen beef}

    Thursday – Roast Beef Hash {using the rest of the leftover frozen beef} with Fried Eggs, Roasted Butternut Squash

    Friday – Dinner out {I think we’re going to a Halloween party}

    Saturday – Baked Tacos with lettuce, tomatoes, sour cream and avocado

    Sunday – Dinner out {not sure what we’re going to do yet, but I’m not cooking!}

    Menu Plan Monday: Week of October 20, 2014

    It’s finally starting to feel like fall around here, although we are supposed to get temps back up in the 90’s toward the end of this week. Crazy, huh? So I’m not quite feeling like soups and casseroles yet, but apples, pears, winter squash, and brussels sprouts are sounding good. On the baking front, I’m planning to make Carrot Cake Loaf, Brownie Spider Web Cake, and chocolate chip cookies.

    Last week, I made these Brownie Spider Bites that were a huge hit with the kids:

    And here’s what I’m thinking for dinners this week:

    Monday – Bacon-Wrapped Tofu, rice, roasted butternut squash

    Tuesday – Pasta Bolognese, steamed broccoli, garlic bread

    Wednesday – Arroz con Pollo, sauteed shredded brussels sprouts

    Thursday – Baked Tacos with lettuce, tomatoes, sour cream and avocado

    Friday – Baked Fish & Chips with crudite and Slow Cooker Spinach Artichoke Dip

    Saturday – Mummy Dogs, crudite with leftover dip

    Sunday – Leftovers

    Menu Plan Monday: Week of October 13, 2014

    This is a rare week when we don’t have plans to go out any night {although I might end up with a mom’s night out, in which case I may or may not cook the boys dinner before I go – ha!}. I’m super excited that the weather is supposed to cool down – all the way down to below 80 degrees at least a couple of days this week, although I’m a little skeptical. But getting below 90, especially now that we’re not getting direct afternoon sun like we do in the summer, means that I can use my oven more freely. So I’m hoping to get some good baking done this week – things like brownies (did you see these adorable brownie bite spiders I pinned the other day?), granola, caramel popcorn, freezer-friendly muffins, bread, and maybe homemade frozen pizza.

    In the meantime, here’s what I’m planning for dinners:

    Monday – Salmon sashimi, Tuna Avocado Salad, rice, some kind of veggie {didn’t get to this last week because I couldn’t get to the Asian market}

    Tuesday – Bean & Cheese Enchiladas, salad

    Wednesday – Beef Pot Pie {using leftover frozen beef}

    Thursday – Roast Beef Hash with Fried Eggs, Roasted Butternut Squash

    Friday – Cajun Salmon Cakes, salad {didn’t get to these last week either}

    Saturday – Leftovers

    Sunday – Breakfast {pancakes, sausage, eggs, fruit}

    Menu Plan Monday: Week of October 6, 2014

    It’s still hot here – hot enough that I don’t want to turn on the oven. Which is actually ok, because I can bake a lot of things in my toaster oven. It’s funny, though, because part of me is ready for fall foods – winter squash, soups, stews, casseroles, and of course, pumpkin. But the bigger part of me is repulsed by the idea of such foods because they’re generally served hot. And the last thing I feel like eating right is hot food, because of the weather. In other words, I really need it to cool down and become fall so that I can cook and eat fall foods! Maybe next week …

    And in the meantime, here’s what I’ve got planned for dinners this week:

    Monday – Dinner out {it’s going to be a crazy busy day, so I’m going to pick up a family meal from Pizza Rev, which includes 4 pizzas, 1 dessert pizza, 4 salad, and 4 drinks for $40 + tax; if you like thin-crust pizza, this stuff is fantastic and relatively healthy if you don’t load up on meat for your toppings}

    Tuesday – Roasted Cauliflower and Sardines with Pasta

    Wednesday – Salmon sashimi, Tuna Avocado Salad, rice, some kind of veggie

    Thursday – Mexican Cornbread Pizza, salad

    Friday – Cajun Salmon Cakes, salad

    Saturday – Breakfast (pancakes or waffles, sausage, eggs, fruit)

    Sunday – Leftovers

    Menu Plan Monday: Week of September 29, 2014

    I thought we were finally getting fall-like weather, but I just checked the seven-day forecast and it’s supposed to be 105 degrees next weekend! So any baking I want to do will have to be done on Monday (the only day forecasted to be in the 80’s), or in my toaster oven. I’m thinking brownies, cupcakes, chocolate-mint bars, and vanilla meringues. It’s a lot, I know, but will definitely get eaten over the course of a week. I’m hoping the meringues will ship well in a priority mail box as a gift too.

    Note re. last week’s menu: I really liked the Baked Polenta with Mushrooms, which made a really hearty side dish and could certainly hold its own as a meatless entree.

    And here’s what I’m thinking for dinners this week:

    Monday – Bean & Cheese Enchiladas, Salad

    Tuesday – Cheeseburger Rice

    Wednesday – Linguine with White Clam and Broccoli Sauce, Garlic Bread

    Thursday – Crock Pot Eggplant Lasagna, Garlic Bread, Salad

    Friday – Smoked Salmon and Cucumber Chirashizushi, Spinach Ohitashi

    Saturday – Breakfast (pancakes, sausage, fruit)

    Sunday – Leftovers
