    Menu Plan Monday | Chief Family Officer

    With too many weekday games and practices, I lost my motivation to plan my menus these last few weeks. I still cooked some, but we also ate out plenty. I want to get back to cooking more, because it’s healthier and we’ll save money. And since things are calming down a little bit, I can and want to get back to menu planning too.

    Here’s my plan for this week:

    Monday – Turkey Bolognese, some kind of vegetable, garlic bread

    Tuesday – Skirt steak, rice, eggs, fruit

    Wednesday – Pizza or calzones, salad or some other veggie

    Thursday – Macaroni and cheese, salad

    Friday – Dinner out

    Saturday – Dinner out

    Sunday – Breakfast for dinner (pancakes, bacon, fruit)

    I totally flaked on a menu plan last week, but we winged it ok. However, I don’t want to do that again, so I’m back to planning this week. What I really need to do is inventory my freezer, so I can use up what I have – because we seem to have quite a bit!

    Here’s my plan for this week:

    Monday – Spam Musubi, crudite {we’ll be eating on the go}

    Tuesday – Beef Roast, some kind of veggie, garlic bread

    Wednesday – Roast Beef Sandwiches, crudite {eating on the go again}

    Thursday – Homemade Poke Bowl {didn’t get to this the other week, but a recipe is coming!}

    Friday – Dinner out

    Saturday – Dinner out

    Sunday – Leftovers (if we’re not eating out again, which we might be)

    My shopping list:
    Carrots
    Celery
    Fruit (whatever looks good)
    Broccoli and/or cauliflower (on sale at Ralphs)
    French bread
    French rolls
    Sashimi grade salmon
    Masago
    Seaweed Salad
    Extra-firm Tofu
    Imitation crab

    Menu Plan Monday: Week of Feb. 29, 2016

    Menu Plan Monday | Chief Family Officer

    I’m loving smoothies as the easiest way to get some extra fruit and veggies into me and the rest of the family, so stay turned for my favorite recipe later this week. Meanwhile, life continues to be quite busy so I’m keeping my kitchen ambitions in check this week, although I have a hankering for blueberry muffins so I might have to find time to make some soon. In the meantime, here’s my plan for this week:

    Monday – take out from Pizza Rev, per my son’s request

    Tuesday – Chicken and Broccoli Casserole

    Wednesday – Roasted Cauliflower and Sardine Pasta {didn’t get to this last week}

    Thursday – Poke Bowl {recipe coming soon} + Broiled Salmon for the kids

    Friday – Potato and Broccoli Frittata

    Saturday – Leftovers

    Sunday – Breakfast {French toast, sausage, fruit}

    My Shopping List:
    Cauliflower (1 head)
    Potato (a bag; I’ll process and freeze the extra for future frittatas and hash)
    Sashimi grade salmon
    Masago
    Seaweed Salad
    Extra-firm Tofu
    Imitation crab
    Breakfast sausage

    I didn’t have nearly as much time last week as I had thought I would, but I managed to get everything organized for our taxes, so that’s no small thing to cross off my list. But this week, I would really like to do some baking!

    Here’s my plan for this week:

    Monday – Kalua Pork, rice, sauteed cabbage

    Tuesday – Garlic Cheddar Chicken Strips, garlic bread, some kind of veggie

    Wednesday – Sandwiches, chips, fruit

    Thursday – Roasted Cauliflower and Sardine Pasta

    Friday – Broccoli Melts, Corn Chowder

    Saturday – Breakfast {waffles or pancakes, bacon, fruit}

    Sunday – Leftovers

    Menu Plan Monday: Week of February 15, 2016

    This weekend is a crazy one, and next weekend is even crazier, but the week in between actually looks to be fairly calm – which I’m so excited about! And the unusually hot weather is supposed to cool down too, so I am going to indulge in some baking. I’m thinking banana bread, Brownie Cookies, and banana pudding.

    Meanwhile, I really didn’t stick to my menu plan last week, so this week’s menu will include a lot of repeats of last week’s. Here’s my plan for this week:

    Monday – Roast Beef Hash with Egg, some kind of veggie

    Tuesday – Egg Salad Onigirazu

    Wednesday – Cheesy Chicken Tater Tots Casserole, some kind of veggie

    Thursday – Bean & Cheese Enchiladas, salad

    Friday – Pasta Salad, Garlic Bread

    Saturday – Dinner out

    Sunday – Dinner out
