  • Menu Plan Monday: Week of November 17, 2014

    We’re rapidly approaching my favorite food day of the year: Thanksgiving! This is the time of year, one to two weeks before Turkey Day, when I daydream constantly about what to make, from sweet potatoes to green beans to other veggies (I’m responsible for bringing the veggie sides, although I’ve been known to show up with extras like bread and a bonus dessert). I’ll share what I’ll be making once I’ve decided, and in the meantime, here’s what I’m planning for this week’s dinners:

    Monday – Salmon sashimi, Tuna Avocado Salad, rice, some kind of veggie

    Tuesday – Portuguese Bean Soup, Garlic Bread

    Wednesday – Roasted Cauliflower and Sardines with Pasta

    Thursday – Slow Cooker Shredded Beef Sandwiches, Broccoli Slaw, Edamame

    Friday – Dinner out {going to a birthday party}

    Saturday – Baked Eggs with Spinach and Mushrooms, maybe some fruit or a fruit-y dessert

    Sunday – Dinner out with extended family

    Menu Plan Monday: Week of November 10, 2014

    We have a really busy week planned, so I’m looking to keep dinners as easy and fast as possible. It doesn’t help that Tuesday is a holiday so there’s no school and the kids will be underfoot all day. It gives us a good chance to work on their school projects that are due before the Thanksgiving break, but hinders my productivity elsewhere.

    So here’s what I’m thinking we’ll eat this week:

    Monday – Dinner out {it’s been a while since we’ve gotten the family meal at Pizza Rev, and I’ve got a craving}

    Tuesday – Bean & Cheese Enchiladas {which are already made and in the freezer, so I just have to defrost and bake!}, Tex Mex rice, salad

    Wednesday – Mac & Cheese, salad, Garlic Bread {didn’t get to this last week}

    Thursday – Beef Pot Pie {using leftover frozen beef}

    Friday – Roast Beef Hash {using the rest of the leftover frozen beef} with Fried Eggs, some kind of veggie

    Saturday – Dinner out {going to a birthday party}

    Sunday – Breakfast for dinner {I’m leaning toward pancakes this week, plus we’ll have bacon and/or sausage, eggs, and fruit}

    Menu Plan Monday: Week of November 3, 2014

    Now that it’s November, it’s finally starting to feel like fall around here! I’m thinking casseroles, stews, and soups. The fabulous thing about them is that they are often make-ahead dishes, and freezer friendly. Here’s what I’ve got planned for dinners:

    Monday – Tonkatsu {almost like a Japanese wiener schnitzel}, rice, some kind of veggie

    Tuesday – Egg salad sandwiches, crudite

    Wednesday – Portugese Bean Soup, Garlic Bread

    Thursday – Mac & Cheese, salad, Garlic Bread

    Friday – Roasted Tilapia with Tomatoes and Olives, Bruschetta

    Saturday – Dinner out {we’re going to be out and about so we will probably just grab food somewhere}

    Sunday – Dinner out {we’re going to be out and about again so we will have to stop somewhere again}

    Menu Plan Monday: October 27, 2014

    I’ll start with a recap of some new recipes from last week:

    The Brownie Spider Web Cake was another huge hit with my kids! However, the Carrot Loaf Cake was not a hit with anyone, including myself, my kids, and the folks at the small party I brought the slices to – I’m not sure what everyone else thought the problem was, but I just wasn’t into the strong olive oil flavor {and I love olive oil, so go figure}. The new chocolate chip cookie recipe I tried was fine but not terrific and the younger boy doesn’t like them at all, so next time I’ll be back to my favorite chocolate chip cookies.

    I never got to a few of the recipes I intended to make last week, so they’ll be back in rotation this week. Here’s what I’ve got planned for dinners:

    Monday – Japanese-style Salmon Croquettes, some kind of veggie

    Tuesday – Mummy Dogs, crudite with homemade ranch dip

    Wednesday – Beef Pot Pie {using leftover frozen beef}

    Thursday – Roast Beef Hash {using the rest of the leftover frozen beef} with Fried Eggs, Roasted Butternut Squash

    Friday – Dinner out {I think we’re going to a Halloween party}

    Saturday – Baked Tacos with lettuce, tomatoes, sour cream and avocado

    Sunday – Dinner out {not sure what we’re going to do yet, but I’m not cooking!}

    Menu Plan Monday: Week of October 20, 2014

    It’s finally starting to feel like fall around here, although we are supposed to get temps back up in the 90’s toward the end of this week. Crazy, huh? So I’m not quite feeling like soups and casseroles yet, but apples, pears, winter squash, and brussels sprouts are sounding good. On the baking front, I’m planning to make Carrot Cake Loaf, Brownie Spider Web Cake, and chocolate chip cookies.

    Last week, I made these Brownie Spider Bites that were a huge hit with the kids:

    Monday – Bacon-Wrapped Tofu, rice, roasted butternut squash

    Tuesday – Pasta Bolognese, steamed broccoli, garlic bread

    Wednesday – Arroz con Pollo, sauteed shredded brussels sprouts

    Thursday – Baked Tacos with lettuce, tomatoes, sour cream and avocado

    Friday – Baked Fish & Chips with crudite and Slow Cooker Spinach Artichoke Dip

    Saturday – Mummy Dogs, crudite with leftover dip

    Sunday – Leftovers
