  • Menu Plan Monday: Week of July 21, 2014

    My father-in-law’s birthday is at the end of this week, and since the man has everything, the best gift we can give is some good home-cooked food. That means I’ll be cooking for sure this week, and cooking double or triple of everything so I can freeze the extras and present them to him this weekend. Then he can eat his gift at his convenience!

    Here’s what I’ve got planned:

    Monday – Pasta Bolognese, Steamed Broccoli, Garlic Bread

    Tuesday – Turkey Meatloaf Burgers, Salad

    Wednesday – Three Bean Chili, served with tortilla chips, lettuce, sour cream, sliced olives and veggies

    Thursday – BBQ Pulled Pork Sandwiches, Sweet Potato Fries, Broccoli Slaw

    Friday – Dinner out {I think; if not, we’ll have Alton Brown’s Sardine-Avocado Sandwiches}

    Saturday – Dinner out

    Sunday – Dinner out

    Menu Plan Monday: Week of July 14, 2014

    I’m hoping this week will be nice and relaxing, but we’ll see – usually when I think it will be an easy week, things get crazier than ever! But if all goes according to plan {oh, who am I kidding? it never does}, here’s what I’m planning for dinners:

    Monday – Bacon-Wrapped Tofu, Rice, some kind of veggie {didn’t get to this last week}

    Tuesday – Pasta Bolognese, Salad, Garlic Bread {didn’t get to this last week either}

    Wednesday – Shredded Pork Hash, some kind of veggie

    Thursday – Chicken Enchiladas, Mexican Rice, Salad

    Friday – Alton Brown’s Sardine-Avocado Sandwiches

    Saturday – Summer Farfalle Salad with Smoked Salmon

    Sunday – Linguine with White Clam and Broccoli Sauce

    Menu Plan Monday: Week of July 7, 2014

    The weather has gotten much hotter, so I really have to think about whether turning on the oven is worth it. Though I have some ripe bananas that are just begging to be made into banana bread (but I may make a half-recipe and bake it in my toaster oven in an 11×17 pan).

    It’s also going to be something of a crazy week, so I’m sticking with tried-and-true recipes that come together quickly or can easily be made well ahead of time.

    Monday – Chicken and Broccoli Pasta Salad

    Tuesday – Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg

    Wednesday – Pasta Bolognese, Salad, Garlic Bread

    Thursday – Bacon-Wrapped Tofu, Rice, some kind of veggie

    Friday – Overnight Caramel French Toast, Bacon, Fruit {or possibly dinner out}

    Saturday – Dinner out

    Sunday – Dinner out

    Menu Plan Monday: Week of June 30, 2014

    We’re not going anywhere for the holiday weekend, so I’m hoping to get some stuff done around the house, including some good baking. Anyone have a bread recipe they want to share? I was talking about baking bread with someone today, and now I can’t stop thinking about it :)

    Monday – Pasta with Cauliflower, Raisins and Anchovies

    Tuesday – Bean & Cheese Enchiladas, Mexican Rice, Salad

    Menu Plan Monday: Week of June 23, 2014

    I’m slowly getting the hang of our summer routine, and feeling like things are going pretty well. I can’t believe we’re already into the last half of June, though. The weeks really do fly by!

    The weather has been getting warmer, so I’ve been trying not to use my oven much. I will have to plan for baking days, when I use all the big baking dishes. I’ve gotten really good with my toaster oven, but the largest dish I can get in there is an 11×7 IKEA dish. So if I’m making something in a 13×9 dish, I have to use the big oven. I haven’t figured out when or if I’ll do my baking day this week, but here’s what I’m planning for dinner this week:

    Monday – Beef Tacos with fixings

    Tuesday – Pasta with Cauliflower, Raisins and Anchovies

    Wednesday – Slow Cooker Eggplant Parmesan with Fresh Mozzarella, Garlic Bread, Salad

    Thursday – Bacon-Wrapped Tofu, Rice, some kind of veggie

    Friday – Breakfast {blueberry pancakes, sausage or bacon, fruit}

    Saturday – Dinner out

    Sunday – Dinner out
