    I didn’t realize what a jam-packed week we have coming up until I started to plan this week’s meals! I’m not quite sure how we’re going to manage, since – if I’m being totally honest – this prepping on Monday thing I’ve been trying to do has not worked out that great. But maybe I just have to get the hang of it, and this week will go better …

    Monday – Pasta Bolognese, Salad, Garlic Bread

    Tuesday – Dinner out

    Wednesday – Ground Turkey Nachos, Salad

    Thursday – Dinner out

    Friday – Sandwiches, Chips, Fruit

    Saturday – Dinner out

    Sunday – Breakfast {cinnamon rolls, bacon or sausage, eggs, fruit}

    Menu Plan Monday: Week of April 14, 2014

    My meal prep plan for last week didn’t go off quite as I’d envisioned, but I still think it’s a great idea in theory so I’m giving it another shot this week. Here’s what I’m thinking for dinners:

    Monday – Chicken Enchiladas, Refried Beans, Salad {plus I’m going to make the leftover chicken into freezer burritos; dice the potatoes for the hash; and prep veggies, depending on what I find that looks good at the market}

    Tuesday – Roast Pork Hash {using leftover kalua pork from a couple of weeks ago}, fried egg, some kind of vegetable

    Wednesday – Ham, Cheese & Broccoli Strata

    Thursday – Bacon-Wrapped Tofu, Rice, some kind of vegetable

    Friday – Dinner out

    Saturday – Dinner out

    Sunday – {still working out plans}

    Menu Plan Monday: Week of April 7, 2014

    Our weeks have been so busy, and I’m getting really tired of make-ahead meals that have to be ready the moment we walk in the door after the boys’ sports … mostly because prepping these meals ahead requires me to do things that I would normally do in the hours after school while they’re doing homework. Instead, those hours have been consumed by games and practices, forcing me to use some of my precious time while the kids are in school to get dinner ready. It’s really playing havoc with my time-management.

    I’ve been racking my brain for ways to make this make-ahead dinner prep easier, and I’ve come up with a couple of ideas. One is to do a big prep session early in the week, probably on Monday. I can chop veggies, brown meat, make salads, and maybe even make a few slow cooker “meal kits.” The other idea is to use my slow cooker a lot more. I’m actually thinking this might be a good habit to get into, and will help me be more efficient all year long, not just during our extra-busy season. So … here’s what I’m thinking for this week’s dinners:

    Monday – Turkey Sloppy Joes, Rolls, some kind of veggie {plus I will prep Turkey Meatloaf Burgers to freeze, salads, roast cauliflower, pound the chicken, and bake}

    Tuesday – Roasted Cauliflower & Sardine Pasta

    Wednesday – Bacon-Wrapped Tofu, rice, some kind of vegetable

    Thursday – Chicken Marsala, garlic bread, salad

    Friday – Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg, Garlic Bread

    Saturday – Dinner out

    Sunday – Breakfast: Waffles, fruit, bacon

    Menu Plan Monday: Week of March 31, 2014

    The end of our week is rather busy, but I’m hoping to get some baking done earlier in the week, along with these dinner plans:

    Monday – Bean & Cheese Enchiladas {green enchilada sauce has been a huge hit compared to the red sauce}

    Tuesday – Kalua Pork, Rice, Sauteed Cabbage

    Wednesday – Roasted Cauliflower & Sardine Pasta

    Thursday – Turkey Sloppy Joes, sweet potato fries

    Friday – out

    Saturday – out

    Sunday – out

    I can’t believe it’s the last week of March already! I will have to work on my April menu plan sometime this week, but I am expecting it to be much easier again with the list of go-to meals I already have done. Of course, we still continue to be incredibly busy. So here’s what I’m thinking for this week:

    Monday – Chicken Broccoli Pasta Salad

    Tuesday – Kalua Pork, Rice, Sauteed Cabbage

    Wednesday – Turkey Meatloaf, Garlic Bread, Salad

    Thursday – Ham and Broccoli Spirals, Salad

    Friday – Pan Bagnat, Chips, Crudite, Fruit

    Saturday – Overnight Caramel French Toast, Bacon, Fruit

    Sunday – Alton Brown’s Sardine-Avocado Sandwiches
