  • Menu Plan Monday: Week of May 20, 2013

    We have a super busy week coming up, and I don’t know how much time and/or energy I’ll have to make dinner … but fortunately, we have a lot of commitments that require me to skip making dinner, so it should all work out. I also plan on baking some Snickerdoodle Bars, Maple Oatmeal Scones, and Jam Crumb Cake. These are all recipes I can bake up in my toaster oven, although it’s supposed to hit 90 degrees only once this week. Unfortunately, I don’t think I’ll have the time to bake up batch of muffins, cupcakes, or cake balls … so hopefully the weather will stay cool next week too.

    In the meantime, here’s what I’m planning on doing for dinners this week:

    Monday – Bacon-Wrapped Tofu, Rice, some kind of vegetable

    Tuesday – Dinner out

    Wednesday – Take out from Zankou Chicken

    Thursday – Dinner out

    Friday – Cauliflower, Raisins & Anchovies with Pasta

    Saturday – Dinner out

    Sunday – Dinner out

    It’s going to be a busy week!

    Menu Plan Monday: Week of May 13, 2013


    It’s supposed to be hot all week, so the only baking I’m planning to do is in the toaster oven. That rules out cupcakes, but I can make almost everything else in the toaster. I’ll probably make some cookies, cinnamon rolls, and coffee cake. And here’s what I’m planning for dinners:

    Monday – Roasted Cauliflower and Sardine Pasta

    Tuesday – Saucy Asian Meatballs, some kind of vegetable

    Wednesday – Roasted Chicken, some kind of vegetable

    Thursday – Chicken Salad using leftover chicken

    Friday – Salmon Furikake with Rice, some kind of vegetable

    Saturday – Leftovers

    Sunday – Pasta Bolognese, Steamed Broccoli, Garlic Bread

    Menu Plan Monday: Week of May 6, 2013

    We had some 100 degree weather last week, so I’m really excited that the temperatures are supposed to cool down this week! It’s so much more pleasant to cook when it’s not searing hot outside, because my kitchen gets very hot also. Here’s what I’m thinking this week:

    Monday – Salmon Croquettes, some kind of vegetable

    Tuesday – Grilled Pizza, salad {will make extra for frozen pizza}

    Wednesday – Chicken Pasta Salad

    Thursday – Salmon Furikake, Rice, some kind of vegetable

    Friday – Taco Cups, crudite

    Saturday – Leftovers

    Sunday – Dinner out? {I’m not entirely sure of our Mother’s Day plans yet}

    Menu Plan Monday: Week of April 29, 2013


    It’s supposed to be really hot this coming week, but I just don’t have it in me to strategically plan my meals out … I’ve just been so busy, and our schedule is still quite crazy. So I’m picking some tried and true favorites, along with planned take-out, to make life as easy as possibly. Hopefully by the end of this week, I’ll feel like I’ve got things under control again!

    Monday – Pizza, Salad

    Tuesday – Roasted Cauliflower and Sardine Pasta

    Wednesday – Zankou Chicken

    Thursday – Bean & Cheese Enchiladas, Salad

    Friday – Sashimi, rice, some kind of vegetable

    Saturday – Leftovers

    Sunday – Taco Bar, Fruit Salad

    Menu Plan Monday: Week of 4/22/2013

    It’s gotten downright hot, so that I’m extremely reluctant to turn on the oven. My toaster oven is going to get a lot of use this week, since I do plan to do some baking. It’s amazing how quickly snacks get eaten up around here :)

    Here’s what we’ll (probably) be having for dinner this week:

    Monday – Chicken pasta salad, Fruit

    Tuesday – Bacon-Wrapped Tofu, Rice, some kind of vegetable {I am making this this week!}

    Wednesday – Easy Baked Fish Fillets, some kind of vegetable

    Thursday – Turkey Sloppy Joes, Fruit

    Friday – Soba Noodles with Miso Broth

    Saturday – Slow Cooker Mongolian Beef, Rice, some kind of vegetable

    Sunday – Dinner out or leftovers {not sure of our plans}
