  • Menu Plan Monday: Week of August 31, 2015

    Our air conditioning broke last week, of course during a major heat wave with temperatures approaching 100 degrees. Thankfully, we have a lot of fans, and we were able to get the a/c partially fixed on Friday, but my menu plan this week is totally contingent on the a/c getting fully fixed tomorrow. If it’s still broken, then we will be eating out almost every night, just to take advantage of the cool air at a restaurant. But hopefully it will get fixed, and here’s my plan for the week:

    Monday:
    Breakfast – Cereal and fruit
    Dinner – Hawaiian style breakfast (rice, eggs, sausage, some kind of sauteed veggie)

    Tuesday:
    Breakfast – Bagels and cream cheese, fruit smoothie
    Dinner – Turkey meatball heroes, some kind of veggie

    Wednesday:
    Breakfast – Blueberry Muffins
    Dinner – Chicken Flautas, salad

    Thursday:
    Breakfast – Breakfast sandwich, fruit
    Dinner – Miso Chicken, rice, some kind of veggie

    Friday:
    Breakfast – probably out, because there’s no school
    Dinner – Breakfast (French toast, bacon, eggs, fruit)

    Saturday Dinner: Dinner out

    Sunday Dinner: Dinner out

    Menu Plan Monday: Week of August 24, 2015

    We all survived the first week of school, and I’ve got some new practices in place when it comes to cooking that I think are going to serve me well. I just need to figure them out a little better and then I can share them with you.

    In the meantime, I did get to those spelt brownies – finally! – and they were a huge hit with the kids. (My kids are picky – even brownies aren’t a guaranteed hit in this house!)

    Here’s my plan for this week:

    Monday:
    Breakfast – Blueberry Muffins
    Dinner – Sweet & Sour Meatballs, rice, bean sprout salad

    Tuesday:
    Breakfast – Breakfast Burrito, Green Smoothie
    Dinner – Kalua Pork with Cabbage, rice, macaroni salad

    Wednesday:
    Breakfast – Cereal, Fruit
    Dinner – Summer Farfalle Salad with Smoked Salmon

    Thursday:
    Breakfast – Breakfast Sandwich, Fruit
    Dinner – Turkey Sliders, Tater Tots, some kind of veggie

    Friday:
    Breakfast – Toast, Fruit
    Dinner – Bean & Cheese Quesadillas, salad

    Saturday Dinner: Dinner out

    Sunday Dinner: Tomato-Crostini Platter, grilled shrimp

    Menu Plan Monday: Week of August 17, 2015

    As you might have noticed, I gave up on menu planning during summer vacation. Our schedule varied so much, and I was actually quite stressed and/or tired each day from keeping the boys entertained. (There are many times when I’ve wished that we had a single family dwelling with a yard instead of a town house with no outside area, so I could just turn the boys loose in the yard to play!) I still cooked, at least a few times a week, but there were many spur of the moment, easy and familiar meals like skirt steak with fried eggs, rather than a planned out meal.

    But school starts tomorrow, so I’m getting back into the groove. It’s been super hot, but is supposed to be closer to 90 degrees instead of 110 on Thursday, so I’m designating that my baking day! (After taking the summer off, I will finally get back on track with the healthy dish of the week and those spelt brownies.) Here’s my plan for this week:

    Monday:
    Dinner – Quinoa Salad with Cucumber, Feta and Shrimp

    Tuesday:
    Breakfast – Cinnamon Rolls, fruit
    Dinner – Slow Cooker Spinach and Artichoke Dip with pita chips and crudite

    Wednesday:
    Breakfast – Toast, fruit
    Dinner – Bacon-Wrapped Tofu, rice, sauteed baby broccoli

    Thursday:
    Breakfast – Yogurt, granola and fruit
    Dinner – Linguine with White Clam and Broccoli Sauce

    Friday:
    Breakfast – Blueberry Muffins
    Dinner – Pasta Bolognese, garlic bread, salad

    Saturday Dinner: Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg

    Sunday Dinner: Dinner out

    Menu Plan Monday: Week of July 20, 2015

    Did you notice that I skipped a menu plan last week? The menu plan for the previous week just didn’t work for me because our life is so unpredictable right now. I just kind of have to go with the flow.

    But my father-in-law’s birthday is coming up, and he’s really hard to buy for so I always cook for him, which I think he likes better anyway. So, I need a menu plan this week because I want to cook and freeze a bunch of meals for him, and we’ll have just some of it for dinner that night.

    Here’s my plan for this week:

    Monday – Slow Cooker Shredded Beef Sandwiches, some kind of veggie

    Tuesday – Chicken Enchiladas, salad

    Wednesday – Turkey Meatloaf Burgers, sweet potato fries

    Thursday – Dinner out

    Friday – Breakfast (French toast, sausage, fruit)

    Saturday & Sunday – Dinner out

    Menu Plan Monday: Week of July 6, 2015

    I *think* my ten-year-old and I are pretty recovered from our bout of jet lag after returning from Japan last week. So it’s time to get back on track with cooking and meal planning, because even though our summer schedule – with all of its sports and flexibility – isn’t super conducive to a menu plan, we always eat better and healthier when I have a plan. So here’s what I’m thinking for this week:

    Monday: Dinner out

    Tuesday: Breakfast (French toast, sausage, eggs, fruit)

    Wednesday: Roasted Cauliflower and Sardines with Pasta

    Thursday: Bacon-Wrapped Tofu, rice, sauteed baby broccoli

    Friday: Slow Cooker Spinach and Artichoke Dip with pita chips and crudite

    Saturday: Chicken Pasta Salad with Broccoli

    Sunday: Leftovers or dinner out
