    Menu Plan Monday | Chief Family Officer

    Whew! That was the best Super Bowl I can ever remember! I was rooting for Peyton Manning to go out on a high note, so I was happy with the outcome. And it makes me feel like this coming week is going to be a good one – even though it’s going to be as busy as ever! 😀

    Here’s my plan for this week:

    Monday – Take out from Pizza Rev, since we ended up not getting it last week

    Tuesday – Roast Beef Hash with Egg, some kind of veggie

    Wednesday – Egg Salad Onigirazu {totally winging this but it sounds good to me!}

    Thursday – Cheesy Chicken Tater Tots Casserole, some kind of veggie

    Friday – Pasta Salad, Garlic Bread

    Saturday – Dinner out

    Sunday – Dinner out

    Menu Plan Monday: Week of February 1, 2016

    Menu Plan Monday | Chief Family Officer

    This week should be a little calmer than last week, at least after mid-week. Whew! I’m still keeping the menu on the simple side, though I really want to find time to make Smitten Kitchen’s Banana Pudding.

    Here’s my plan for this week:

    Monday – Take out from Pizza Rev, which does a Monday Meal Deal that includes 4 pizzas, 4 salads, 4 drinks, and 1 dessert pizza for $40 + tax

    Tuesday – Crock Pot Cheesy Pasta and Beef Casserole, some kind of veggie

    Wednesday – Salmon Poke Bowl

    Thursday – Slow Cooker Tuna Noodle Casserole with Peas

    Friday – Quesadillas, salad

    Saturday – Breakfast {French toast, bacon, eggs, fruit}

    Sunday – Leftovers

    Menu Plan Monday: Week of January 25, 2016

    Menu Plan Monday | Chief Family Officer

    I’m not quite sure what happened, but all of a sudden life has gotten crazy busy so I’m trying to do easy meals, including some that can be made ahead (Wednesday and Thursday) or left alone (Monday). It definitely doesn’t look like I’ll be doing much baking this week, other than the cornbread on Monday (I’m buying the bread for Tuesday and Wednesday).

    Here’s my plan for this week:

    Monday – Slow Cooker BBQ Ribs, cornbread, some kind of veggie

    Tuesday – Broccoli & Feta Pesto Pasta, garlic bread, some kind of veggie

    Wednesday – Italian Pressed Sandwich, crudite

    Thursday – Bacon-Wrapped Tofu, rice, some kind of veggie {didn’t get to it last week because I forgot to buy tofu!}

    Friday – TK’s Hot Buttered Chicken, some kind of veggie

    Saturday – Breakfast {French toast, sausage, eggs, fruit}

    Sunday – Leftovers

    Menu Plan Monday: Week of January 18, 2016

    Menu Plan Monday | Chief Family Officer

    We’ve had a crazy busy weekend full of sports, so I’m not sure my brain is really functioning as I write this. But I do know that before we left this morning, I saw Giada De Laurentiis making a pasta dish with anchovies and spinach, and that I had to incorporate it into my menu plan this week! The kids probably won’t eat it and will end up having grilled cheese or cereal, but as long as they try it, I’m okay with that. Part of the reason I’m cooking more this year is because I’ve stopped trying to please everyone!

    Here’s my plan for this week:

    Monday – Bacon-Wrapped Tofu, rice, some kind of veggie

    Tuesday – Chicken and Wild Rice Soup, cornbread

    Wednesday – Spicy Garlic and Anchovy Farfalle, garlic bread

    Thursday – Slow Cooker Kalua Pork, rice, sauteed cabbage

    Friday – Mussels in White Wine Sauce {Private Selection brand from Ralphs – inexpensive and so good and easy!}, garlic bread, some kind of vegetable

    Saturday – Cheese quesadillas, Guacamole, Salsa

    Sunday – Leftovers

    Menu Plan Monday: Week of January 11, 2016

    Menu Plan Monday | Chief Family Officer

    In theory, a three-week winter break sounds fine, but by the end of three weeks, I’m more than ready for the kids to go back to school (even if they don’t feel the same way!). I’ll take it easy this week, but I’m looking forward to getting into a routine again, and getting all the things done that I want to get done.

    In the meantime, here’s my plan for this week:

    Monday – Homemade Spicy Salmon Poke Bowl with seaweed salad, cucumber and avocado

    Tuesday – Light Fettucine Alfredo with Shrimp and Broccoli

    Wednesday – Slow Cooker French Dip Sandwiches, Broccoli Slaw

    Thursday – Homemade Gravlax with bagels and cream cheese {didn’t get to this last week}

    Friday – Chicken Tortilla Soup

    Saturday – Breakfast {pancakes, bacon, eggs, fruit}

    Sunday – Leftovers
