I'm not quite sure what happened, but all of a sudden life has gotten crazy busy so I'm trying to do easy meals, including some that can be made ahead (Wednesday and Thursday) or left alone (Monday). It definitely doesn't look like I'll be doing much baking this week, other than the cornbread on Monday (I'm buying the bread for Tuesday and Wednesday).
Here's my plan for this week:
Monday - Slow Cooker BBQ Ribs, cornbread, some kind of veggie
Tuesday - Broccoli & Feta Pesto Pasta, garlic bread, some kind of veggie
Wednesday - Italian Pressed Sandwich, crudite
Thursday - Bacon-Wrapped Tofu, rice, some kind of veggie {didn't get to it last week because I forgot to buy tofu!}
Friday - TK's Hot Buttered Chicken, some kind of veggie
Saturday - Breakfast {French toast, sausage, eggs, fruit}
Sunday - Leftovers
