Menu Plan Monday: Week of January 18, 2016

We've had a crazy busy weekend full of sports, so I'm not sure my brain is really functioning as I write this. But I do know that before we left this morning, I saw Giada De Laurentiis making a pasta dish with anchovies and spinach, and that I had to incorporate it into my menu plan this week! The kids probably won't eat it and will end up having grilled cheese or cereal, but as long as they try it, I'm okay with that. Part of the reason I'm cooking more this year is because I've stopped trying to please everyone!

Here's my plan for this week:

Monday - Bacon-Wrapped Tofu, rice, some kind of veggie

Tuesday - Chicken and Wild Rice Soup, cornbread

Wednesday - Spicy Garlic and Anchovy Farfalle, garlic bread

Thursday - Slow Cooker Kalua Pork, rice, sauteed cabbage

Friday - Mussels in White Wine Sauce {Private Selection brand from Ralphs - inexpensive and so good and easy!}, garlic bread, some kind of vegetable

Saturday - Cheese quesadillas, Guacamole, Salsa

Sunday - Leftovers
