Life has gotten extremely busy now that my kids have a lot of sports during the week as well as on the weekends. I already miss the two months we had when almost all of their activities were confined to weekends, but I'm also having fun watching them play. :) However, our hectic schedule does make menu-planning and dinner prep more challenging. So once again, I'm sticking with some tried-and-true favorites that I know well.
Monday - Slow Cooker Corned Beef {just plop the seasoned corned beef into the slow cooker! I bought Open Nature at Vons since it has no antibiotics, no nitrates or nitrites, and no added hormones}; Shredded Cabbage {I haven't decided if I will sautee the cabbage and caramelize it or just toss the cabbage into the slow cooker for 30 to 60 minutes}; maybe I will also make Irish Soda Bread
Tuesday - Chicken Salad Sandwiches; crudite or fruit
Wednesday - Calamari; Garlic Bread; some kind of veggie
Thursday - Miso Chicken; Rice; some kind of veggie
Friday - Dinner out
Saturday - Dinner out
Sunday - Overnight Caramel French Toast; Bacon or Sausage; Fruit
I'm also going to make Magic Bars and Chocolate Mousse.
