"Lazy" Recipe: Flatbread Pizza

A couple of months ago, Carol asked for "lazy" recipes, and this is one that I've recently begun making. Homemade pizza sauce doesn't take very long, but if you go with jarred, this is about as lazy (and quick) as it gets!

Lazy Flatbread Pizza
Makes one pizza. Double/multiply ingredients to make more pizzas.

1 naan (I'm partial to Stonefire brand)
2-4 tablespoons pizza sauce
2-4 tablespoons shredded mozzarella
2-4 tablespoons pizza toppings

1. Preheat oven to 375 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

2. Place naan on baking sheet. Spread sauce on naan. Sprinkle cheese over sauce. Sprinkle toppings on cheese. (Vary amounts based on the preference of the eater.)

3. Bake for 10-12 minutes or until cheese is lightly browned. Serve hot.

This flatbread pepperoni pizza is ready to eat! Since the pizza is small, I cut the pepperoni into small pieces too.

This is a particularly easy meal to customize with toppings to satisfy the whole family. (I like mushrooms and olives, my husband likes spinach, the kids like cheese and pepperoni.) However, it's also one of the easiest meals to make when one of the kids is hungry at an inconvenient time!
