Menu Plan Monday: Week of July 6, 2015


I *think* my ten-year-old and I are pretty recovered from our bout of jet lag after returning from Japan last week. So it's time to get back on track with cooking and meal planning, because even though our summer schedule - with all of its sports and flexibility - isn't super conducive to a menu plan, we always eat better and healthier when I have a plan. So here's what I'm thinking for this week:

Monday: Dinner out

Tuesday: Breakfast (French toast, sausage, eggs, fruit)

Wednesday: Roasted Cauliflower and Sardines with Pasta

Thursday: Bacon-Wrapped Tofu, rice, sauteed baby broccoli

Friday: Slow Cooker Spinach and Artichoke Dip with pita chips and crudite

Saturday: Chicken Pasta Salad with Broccoli

Sunday: Leftovers or dinner out
