Menu Plan Monday: Week of October 13, 2014


This is a rare week when we don't have plans to go out any night {although I might end up with a mom's night out, in which case I may or may not cook the boys dinner before I go - ha!}. I'm super excited that the weather is supposed to cool down - all the way down to below 80 degrees at least a couple of days this week, although I'm a little skeptical. But getting below 90, especially now that we're not getting direct afternoon sun like we do in the summer, means that I can use my oven more freely. So I'm hoping to get some good baking done this week - things like brownies (did you see these adorable brownie bite spiders I pinned the other day?), granola, caramel popcorn, freezer-friendly muffins, bread, and maybe homemade frozen pizza.

In the meantime, here's what I'm planning for dinners:

Monday - Salmon sashimi, Tuna Avocado Salad, rice, some kind of veggie {didn't get to this last week because I couldn't get to the Asian market}

Tuesday - Bean & Cheese Enchiladas, salad

Wednesday - Beef Pot Pie {using leftover frozen beef}

Thursday - Roast Beef Hash with Fried Eggs, Roasted Butternut Squash

Friday - Cajun Salmon Cakes, salad {didn't get to these last week either}

Saturday - Leftovers

Sunday - Breakfast {pancakes, sausage, eggs, fruit}

That roast beef hash looks like something that would be right up Hubby's alley ... I see that you used ground beef instead which I have plenty of so I am bookmarking your recipe to try! Hopped over from Organized Junkie's Menu Plan Monday!

You could totally "cheat" and use frozen hash browns too :)
