School starts a week from Tuesday! Part of me is looking forward to being able to settle into a real routine again - I always get so much more done. But another part of me will miss the flexible schedule of summer.
For this coming week, I'd like to clean out my freezer and pantry. I'm not sure why, but I'd like to start the school year with some empty shelves! So here's what I'm thinking for dinners this week:
Monday - Roasted Pork Hash, Zucchini Coins
Tuesday - Tex-Mex Cornbread "Pizza", Salad
Wednesday - Ma Po Tofu, rice, steamed broccoli
Thursday - Chicken Enchiladas, Salad, Refried Beans and Mexican Rice
Friday - Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg
Saturday - Bacon-Wrapped Tofu, rice, some kind of veggie
Sunday - Pan Bagnat, Sweet Potato Fries
