I can't believe it, but school starts tomorrow! My kids are less than thrilled, and they haven't cooperated with my strongly worded suggestions to go to sleep earlier (bedtime got pushed back during the summer due to late sports practices) so I'm expecting it to be a rough week. Accordingly, I'm focusing on quick and easy meals, so I can focus on getting things done around the house (all those things I put off while running around with them during the summer), and helping them with their homework.
Here's what I'm thinking for dinners this week:
Monday - Pizza, Salad
Tuesday - Chicken Enchiladas, Salad
Wednesday - Bacon-Wrapped Tofu, rice, some kind of veggie
Thursday - Pulled Pork Sandwiches, Sweet Potato Fries
Friday - Dinner out {going to my friend's wedding - yippee!}
Saturday - Dinner out
Sunday - Dinner out
