Menu Plan Monday: Week of April 7, 2014


Our weeks have been so busy, and I'm getting really tired of make-ahead meals that have to be ready the moment we walk in the door after the boys' sports ... mostly because prepping these meals ahead requires me to do things that I would normally do in the hours after school while they're doing homework. Instead, those hours have been consumed by games and practices, forcing me to use some of my precious time while the kids are in school to get dinner ready. It's really playing havoc with my time-management.

I've been racking my brain for ways to make this make-ahead dinner prep easier, and I've come up with a couple of ideas. One is to do a big prep session early in the week, probably on Monday. I can chop veggies, brown meat, make salads, and maybe even make a few slow cooker "meal kits." The other idea is to use my slow cooker a lot more. I'm actually thinking this might be a good habit to get into, and will help me be more efficient all year long, not just during our extra-busy season. So ... here's what I'm thinking for this week's dinners:

Monday - Turkey Sloppy Joes, Rolls, some kind of veggie {plus I will prep Turkey Meatloaf Burgers to freeze, salads, roast cauliflower, pound the chicken, and bake}

Tuesday - Roasted Cauliflower & Sardine Pasta

Wednesday - Bacon-Wrapped Tofu, rice, some kind of vegetable

Thursday - Chicken Marsala, garlic bread, salad

Friday - Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg, Garlic Bread

Saturday - Dinner out

Sunday - Breakfast: Waffles, fruit, bacon
