This is the first month I've made my menu plan using the simplified method I've come up with. I'll share more details on that later this week. It definitely made things easier, and I didn't find the task as dreadful as I have in the past {although I did realize that we are entering another season of super busy-ness!}. More on that later, too. In the meantime, here's what we'll be having for dinner this week:
Monday - Pasta with Creamy Mushroom Sauce, sauteed "power" greens {I love that bagged blend at Trader Joe's!}
Tuesday - Alton Brown’s Sardine-Avocado Sandwiches, Chips
Wednesday - Sashimi, rice, sauteed enoki mushrooms
Thursday - Ham & Broccoli Spirals, fruit salad
Friday - Pan Bagnat, Chips
Saturday - Dinner out
Sunday - Overnight Caramel French Toast, fruit
I'll make another batch of Magic Bars {seriously, the recipe is awesome for using up crackers and cookies on their last legs}, and some blueberry muffins because that's what I've been craving.

A creamy mushroom sauce sounds really nice! My husband and I loove mushrooms. Your french toast sounds delicious, too!
