
The boys' sports schedule and our social obligations are easing up, so we'll actually be home all week! I'm still busy, but since I'll be in the kitchen making dinner, I'm hoping to get some quick baking done as well. Here's what I've got planned:
Monday - Bacon Wrapped Tofu, Rice, Roasted Butternut Squash or Asparagus
Tuesday - Smoked Cheddar and Lentil Burgers, Sweet Potato Fries
Wednesday - Easy Baked Fish Fillets, Sauteed Rainbow Carrots, Garlic Bread
Thursday - Baked Pasta with Spinach, Ricotta, and Prosciutto, Salad, Rolls
Friday - Slow Cooker Shredded Beef Sandwiches, Streuseled Sweet Potato Casserole
Saturday - Beef Hash {using leftover meat}, Sauteed greens {kale, chard or spinach}, Biscuits
Sunday - Dinner out or Leftovers
