I have to admit that I haven't been doing the best job at following my own meal plans . . . probably because, as I mentioned a few days, I'm in a bit of a rut. But the seasons are changing, and so is the produce - I went to Trader Joe's yesterday and instead of the nectarines and peaches that abounded last week, I found winter squash and pears. Their price on butternut squash is so good ($1.69 each!) that I bought two. So . . . here's what's on tap this week:
Monday - Grilled pizza, salad (because even though we have squash, it's still 90+ degrees)
Tuesday - Dinner out
Wednesday - Roasted butternut squash risotto with garlic shrimp
Thursday - Cornbread Taco Pizza
Friday - Antipasto Tortellini Salad
Saturday - Grilled Asparagus with prosciutto, fried bread, poached egg, and aged balsamic vinegar (from Ad Hoc)
