Link Roundup + A Menu Plan That's Mostly Vegetarian

I'm finally at the point where I'm still missing the kids but I can also appreciate how nice it is that it's just two of us and Stella. Meals are a lot easier, and I'm doing a lot less marketing. However, I'd like to get more projects done (like steam cleaning the carpets), so I'd better get going - after all, it's already October! Tuesday 10/7 - Gochujang Potato Stew (been meaning to make this for a while)

Wednesday 10/8 - Sheet Pan Ratatouille with Crispy Chickpeas (didn't get to this last week either)

Thursday 10/9 - Crispy Black Bean Tacos

Friday 10/10 - Tuna Noodle Casserole

Saturday 10/11 - Dinner out

Sunday 10/12 - Baked Polenta Squares (not sure what I'm going to serve them with yet, probably veggies and a runny egg)
