The air conditioning did not get fixed until Thursday of last week, so that kind of rendered last week's menu plan useless. On the bright side, getting the a/c fixed naturally coincided with a drop in temperatures, which has scratched my itch to bake. I'm going to try Trisha Yearwood's Chocolate Chip Cookies and maybe Ina Garten's Double Chocolate Layer Cake. (Although temps are supposed to go back up this week, so I may not feel like baking again - I may at least have to stick to things I can make in my toaster oven.)
Here's my plan for this week:
Monday:
Dinner - out
Tuesday:
Breakfast - Yogurt with granola and fruit
Dinner - Turkey meatball heroes, some kind of veggie
Wednesday:
Breakfast - Bagels and cream cheese, fruit smoothie
Dinner - Miso Salmon, rice, sauteed baby broccoli
Thursday:
Breakfast - Blueberry Muffins
Dinner - Cavatappi with Prosciutto and Parmesan, some kind of veggie
Friday:
Breakfast - Breakfast Burritos
Dinner - Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg
Saturday Dinner: Hawaiian style breakfast (rice, eggs, sausage, some kind of sauteed veggie)
Sunday Dinner: Six Layer Nachos, tortilla chips, salad
