Menu Plan Monday: Week of Sept 28, 2015


These Chocolate Chip Cookies, which I mentioned last week, are my kids' new favorite (I left out the nuts), and my only complaint is that they don't lend themselves to small cookies so I can't pack them in their lunch boxes. (I use these Sistema containers for lunches every day. They are the perfect size for my kids, when I add a drink and an applesauce pouch.) So I am going to try this Martha Stewart recipe next.

Also, if you are looking for a delicious, easy, one-dish meal, I highly recommend tweaking Smitten Kitchen's Zucchini/Rice casserole. I used cooked rice, so I cut down considerably on the liquid, and added shredded chicken for protein. If you are feeding more than four people or want leftovers, I would increase quantities if you're using this as a one-dish meal.

Here's my plan for this week:

Monday:
Breakfast - Breakfast Cookies
Dinner - Shoyu Chicken, rice, some kind of veggie

Tuesday:
Breakfast - Pancakes or toast, fruit
Dinner - Pasta Bolognese, salad, garlic bread

Wednesday:
Breakfast - Homemade Jam Tarts
Dinner - Chicken Enchiladas, salad

Thursday:
Breakfast - Breakfast sandwiches, fruit
Dinner - Bacon-Wrapped Tofu, rice, some kind of veggie

Friday:
Breakfast - Oatmeal, fruit
Dinner - Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg

Saturday Dinner: Dinner out

Sunday Dinner: Breakfast for dinner (pancakes, sausage, eggs, fruit)

just curious, is the systema containers any better/different from other tupperware contaners? its pricier than others, and i saw it at target and cvs. was thinking about getting it but didint want to waste extra money justincase.
also i sometimes use some of ur meal/recipes and sub with meatless options to cater towards my preferences.- thanks for posting ur fams meals

The Sistema Klip-Its are leak-proof, which I really like. They are also easy for my kids to handle, even when they were little (this isn't true of all containers), and they are BPA-free. Not sure if that makes them different or better, but I like them a lot :)

I'd love to know if you have a favorite dish you picked up from CFO!
