I'm slowly getting the hang of our summer routine, and feeling like things are going pretty well. I can't believe we're already into the last half of June, though. The weeks really do fly by!
The weather has been getting warmer, so I've been trying not to use my oven much. I will have to plan for baking days, when I use all the big baking dishes. I've gotten really good with my toaster oven, but the largest dish I can get in there is an 11x7 IKEA dish. So if I'm making something in a 13x9 dish, I have to use the big oven. I haven't figured out when or if I'll do my baking day this week, but here's what I'm planning for dinner this week:
Monday - Beef Tacos with fixings
Tuesday - Pasta with Cauliflower, Raisins and Anchovies
Wednesday - Slow Cooker Eggplant Parmesan with Fresh Mozzarella, Garlic Bread, Salad
Thursday - Bacon-Wrapped Tofu, Rice, some kind of veggie
Friday - Breakfast {blueberry pancakes, sausage or bacon, fruit}
Saturday - Dinner out
Sunday - Dinner out
