Menu Plan Monday: Week of May 26, 2014

We've got a surprisingly easy week coming up, but I'm still taking it easy with favorite {read: easy} meals, and trying to create margin for other things that I want/need to get done. I don't know if a pantry challenge will be feasible during the summer, with the boys' practice schedules, but I'm hoping to do one and clear out a good portion of my cabinets. I think it will be doable, with some careful planning ...

In the meantime, here's what I've got on tap for dinner this week:

Monday - Kalua Pork, rice, some kind of veggie {didn't get to this last week}

Tuesday - Alton Brown’s Sardine-Avocado Sandwiches

Wednesday - Bacon-Wrapped Tofu, Rice, some kind of veggie

Thursday - Pasta Bolognese, Salad, Garlic Bread

Friday - Dinner out

Saturday - Overnight Caramel French Toast, Bacon, Fruit

Sunday - Cheesy Mashed White Beans With Kale, Parmesan, and a Fried Egg
