
My meal prep plan for last week didn't go off quite as I'd envisioned, but I still think it's a great idea in theory so I'm giving it another shot this week. Here's what I'm thinking for dinners:
Monday - Chicken Enchiladas, Refried Beans, Salad {plus I'm going to make the leftover chicken into freezer burritos; dice the potatoes for the hash; and prep veggies, depending on what I find that looks good at the market}
Tuesday - Roast Pork Hash {using leftover kalua pork from a couple of weeks ago}, fried egg, some kind of vegetable
Wednesday - Ham, Cheese & Broccoli Strata
Thursday - Bacon-Wrapped Tofu, Rice, some kind of vegetable
Friday - Dinner out
Saturday - Dinner out
Sunday - {still working out plans}
