I've been discussing my menu plan struggles for the last few weeks, and my plan has been to use Mondays to prep for the week. I haven't been very good at accomplishing much, though, and I've decided today is The Day It Happens. Here's what I'm going to get done:
- Bake brownies
- Make strata for tonight's dinner
- Roast cauliflower for tomorrow's dinner
- Make tomorrow's dinner
- Wash and chop veggies for salad {I keep lettuce in the salad spinner in the fridge}
- Cut pineapple {my "second" mom gets us a year-long organic fruit-of-the-month subscription from Harry & David}
- Turn brownies into bons bons
- Make simple syrup
- Make chai tea latte concentrate {recipe to come}
If this goes well {fingers crossed}, I will try to do this every week!

I'm interested in seeing how this all goes. I just can't get into a routine of meal prepping. I usually try to take a few minutes to prep when I'm putting away the breakfast dishes.
I will however take a bigger chunk of time when unloading groceries to chop a few veggies, and if bought some meat to put in the freezer, I usually package it up with the marinade, or whatever it meal I'm planning on making it.
You're much better about prepping after you go shopping than I am, Wendy! But today went pretty well - I made dinner for tonight and tomorrow, as planned. I made brownies but didn't get around to making them into bon bons - maybe next time, lol. I got almost everything else done, too, so I think we're pretty well set for the week. I definitely need to make this a regular thing :)
