Menu planning is not my favorite thing to do, but we really do eat healthier when I cook, and of course we save quite a bit of money, too. So I went ahead and planned out my entire menu for October. I know that I'll have to adjust the menu each week, as changes to our schedule come up. But experience has taught me that I'm much more likely to plan a weekly menu if I have one already planned that I just need to tweak.
I also find that planning my menu a month in advance, with all of the recipes I've pinned to my Pinterest boards in front of me, makes me more enthusiastic about cooking as I peruse all of the meals I've yet to try.
Here's what we're having this week:
Monday - Pasta Bolognese, Steamed Broccoli {didn't have this last week}
Tuesday - Bacon-Wrapped Tofu, Rice, some kind of vegetable
Wednesday - Dinner out
Thursday - Dinner out
Friday - Skillet Chicken with Apricots and Capers, some kind of side
Saturday - Beef and Gorgonzola Toasts with Herb-Garlic Cream, Crudite
Sunday - Overnight Caramel French Toast, Sausage, Fruit

your menu looks great. i am going to check out the apricot chicken recipe. i wish i could plan for a month but i never know what each week is going to be like since sometimes the baby goes to her dads extra days so i dont always need to cook a big meal when she isnt home. so im sticking with a week at a time but i always have ideas for the month:)
