I'm recovering from a (thankfully) brief bout with the flu, so I'll be taking it easy with dinner this week. Fortunately, we already had plans to to eat out a couple of nights, so here's what I've got planned:
Monday - Zankou Chicken (didn't get to this last week either, and it's possibly my boys' favorite meal so we have to have it this week), salad
Tuesday - Portugese Bean Soup (didn't get to this last week)
Wednesday - Macaroni and Cheese, some kind of veggie
Thursday - Dinner out
Friday - Chicken and Wild Rice Soup, fruit
Saturday - Miso-Glazed Salmon, rice, some kind of veggie
Sunday - Dinner out
