Menu Plan Monday: Week of 9/17/2012

I'm still figuring out this gluten-free thing, but having a menu plan should help a lot. It also helps with our crazy schedule, as I can plan make-ahead meals for those days when we'll be home late or have a function in the evening. Here's what I'm thinking for this week:

Monday - Mac & Cheese, Sauteed Green Beans, Fruit (I'll fix some cheesy polenta for myself)

Tuesday - BBQ Meatballs, Garlic Butterhorns, Green Beans

Wednesday - Salmon Furikake, Rice, some kind of vegetable

Thursday - Eggplant Parmesan, Salad, Rolls

Friday - Chicken Long Rice or Kalua Pork, Rice, some kind of vegetable

Saturday - (not sure of our plans)

Sunday - Dinner out
