I've found myself feeling like not cooking (or doing much for that matter), but I'm hoping this menu plan keeps me going anyway!
Monday - Spanish Spaghetti with Olives and Pear, Date & Manchego Salad
Tuesday - Mexican Lasagna, Refried Beans, Salad, Apple Crumb Croustades
Wednesday - Somen Salad, Strawberries & Cream
Thursday - Chicken Milanese, some kind of vegetable
Friday - Southwest Salmon Caesar
Saturday - Not sure what our plans are
Sunday - Dinner out
I'd also like to get some baking done this week, incorporating more fruit and maybe even sneaking in some veggies!
