
Slow Cooker Steel Cut Oatmeal
Serves 6
1 1/2 cups steel cut oats
4 cups water
2 cups milk
1/3 cup packed dark brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Combine all ingredients in slow cooker and cook on low for six to eight hours - the time will depend on how hot your slow cooker runs. Mine is done in about six hours (in the photo, it's been cooking for 4 1/2). I've found that if I let the oatmeal cool completely in the refrigerator, it doesn't stick to the sides much.
I freeze the oatmeal in individual-serving portions and serve it with some dried fruit and approximately one tablespoon of brown sugar.

I love this idea! But I have some questions.
What size crockpot do you use? Do you freeze it in baggies or plastic containers? And how do you heat and serve it once you've frozen it?

@anon - Great questions! I use a 4-quart crock and freeze in containers. I reheat in the microwave (transferring to a bowl, since I try not to microwave plastic). I think it would dry out if reheated on the stove, unless you added liquid. Hope that helps!
