Sandwich ideas

I have been trying to eat healthier, but finding it difficult to eat anything that takes more than 60 seconds to prepare with two kids underfoot - so instead I keep reaching for cookies. I saw these sandwich ideas in the September issue of Parents and am adding them to my list of super-fast options (plus they're less expensive than buying a snack):
  • veggie cream cheese and sliced cucumber
  • almond (or peanut) butter with slivered almonds and dried cranberries
  • hummus and chopped peppers
  • apple butter and fresh apple slices (I'm going to try this with some pumpkin butter, since I just picked up a jar)
  • whipped cream cheese and fresh berries
  • spreadable cheese with cold cuts and grated carrot
  • jam and cream cheese

We've started making and freezing the PB&J sandwiches for my daughter's school lunch on Sunday night and then pulling them out during the week. They defrost by the time she eats at Noon. Just like an uncrustable, but less expensive. The sandwich ideas are good and I'll try some of them for me, but my daughter is in 7th grade and there have been maybe 10 times a year when she hasn't had either a PB&J or a plain PB sandwish in her lunch. It's what she likes and it's on whole-wheat bread so it's relatively healthy. Who am I to complain - I don't have to worry about changing, finicky tastes, right?!

Mar - I think freezing the sandwiches is brilliant - I'm definitely going to do that for myself! (Alex isn't crazy about PBJ yet.)
