  • Menu Plan Monday: Week of May 12, 2014

    This week is a tricky one, because I’m expecting events to pop up at the last minute. I’m thinking dinner should be a make-ahead meal almost every night, since I won’t know when I’ll be home to get it ready … So here’s the plan:

    Monday – Pasta with Roasted Cauliflower, Raisins and Anchovies

    Tuesday – Salmon Furikake, Rice, some kind of veggie

    Wednesday – Slow Cooker Eggplant Parmesan

    Thursday – Chicken Pasta Salad with Chopped Broccoli

    Friday – Breakfast {cinnamon rolls, sausage, eggs, fruit}

    Saturday – Dinner out

    Sunday – Alton Brown’s Sardine-Avocado Sandwiches
