  • Menu Plan Monday: Week of April 14, 2014

    My meal prep plan for last week didn’t go off quite as I’d envisioned, but I still think it’s a great idea in theory so I’m giving it another shot this week. Here’s what I’m thinking for dinners:

    Monday – Chicken Enchiladas, Refried Beans, Salad {plus I’m going to make the leftover chicken into freezer burritos; dice the potatoes for the hash; and prep veggies, depending on what I find that looks good at the market}

    Tuesday – Roast Pork Hash {using leftover kalua pork from a couple of weeks ago}, fried egg, some kind of vegetable

    Wednesday – Ham, Cheese & Broccoli Strata

    Thursday – Bacon-Wrapped Tofu, Rice, some kind of vegetable

    Friday – Dinner out

    Saturday – Dinner out

    Sunday – {still working out plans}
