  • Menu Plan Monday: Week of June 3, 2013

    With young kids, this season of my life means that I am constantly adjusting to new routines. This is the last week of school, and we’re starting a new sports schedule. My hope is that I can master the art of menu planning around our new routine, but it’s going to be a bit of an awkward one with lots of evening sports practices – I need want to somehow figure out meals that work for our new schedule so we can avoid lots of fast food and eating out!

    Here’s what I’m thinking for this week:

    Monday – Bean & Cheese Enchiladas, Salad

    Tuesday – Lasagna Casserole, Salad

    Wednesday – Miso Chicken, Rice, some kind of veggie

    Thursday – Pan-Seared Tilapia with Citrus Vinaigrette, Roasted Asparagus

    Friday – Dinner out {though I think I’m bringing dessert}

    Saturday – Depends on how the day goes …

    Sunday – Depends on how the day goes …

    Most of our weekends are going to look like this during the summer … it all depends on the boys’ sports schedule!
