
We’ve got new team practices, which means I’ve got a new afternoon/evening schedule to get used to, and that impacts my dinner planning. Hopefully it won’t get too crazy – I remember feeling rather overwhelmed in the fall – and my menu plan will go smoothly this week:
Monday – Ham & Manchego Tartine, Salad
Tuesday – Zucchini Eggplant Lasagna
Wednesday – Salmon Furikake, Rice, some kind of vegetable
Thursday – Cajun Salmon Cakes, Broccoli Slaw
Friday – Farfalle with Creamy Wild Mushroom Sauce, Fruit
Saturday – Leftovers
Sunday – Dinner out
