After spending two hours in the kitchen making dinner last night (it was calamari), I realized that I’m not exactly making my life easier with the meals I choose. So I’m going to shoot for one freezer meal a week – as in, I make a double recipe of a freezer-friendly meal, which I can use in a couple of weeks to make my life easier. (It seems like a no-brainer, and it’s something I used to do, but I’ve totally gotten away from it – but no longer!) Here’s what I’ve got planned for this week:
Monday – Pasta with Bolognese Sauce, Steamed Broccoli, Garlic Bread
This will be my freezer meal for the week.
Tuesday – Miso Chicken, Rice, some kind of vegetable
Wednesday – Tomato Soup & Grilled Cheese Sandwiches, Apple Crisp
Thursday – Fish Tacos with Cabbage Slaw, some kind of fruit or maybe a mango-avocado salsa
Friday – Sashimi, Rice, some kind of vegetable
Saturday – Dinner out
Sunday – Dinner out
