  • Menu Plan Monday: Week of 8/27/2012

    Each week, I refine my goals for my weekly menu, so that now I try to have at least one meal that’s meatless, one that’s Japanese-centric, one that’s seafood-based, one that makes school lunch-friendly leftovers, and a new recipe to keep things interesting.

    But it’s hard to juggle all of my desires with the realities of our life. For example, we now have a soccer practice on Wednesdays at a time when we’d normally be eating dinner. I’m not quite sure what I want to do on those days, especially since my younger son will want to eat his dinner at the practice if he goes too. I think my vision will be something like sandwiches ready to go in the fridge that we can dig into as soon as we get home. Also this week, I have an appointment on Tuesday afternoon, and we have a school event on Thursday evening.

    I try take all of these things into account so I can still get dinner on the table at the usual time. It’s not always easy or fun, and it doesn’t always work out, but that’s the whole point of menu planning: I can still get a healthy meal on the table, whatever else is going on!

    Monday – Greek-Style Skewers, Orzo with Feta & Kalamata Olives
    A new recipe

    Tuesday – Farfalle with Cauliflower and Raisins
    Made ahead so I don’t have to rush in the evening; Meatless

    Wednesday – Muffuletta, Pinto, Black, and Red Bean Salad with Grilled Corn and Avocado
    Also a new recipe

    Thursday – Vegetable Tempura {didn’t get to it last week}
    Japanese food

    Friday – Pizza Pockets, Salad {didn’t get to this last week either}
    Freezer friendly, and hopefully school lunch friendly also

    Saturday – {not sure of our plans yet}

    Sunday – Dinner out

    2. Nony at A Slob Comes Clean (http://www.aslobcomesclean.com/) has some great ideas for picnic dinners for eating during soccer practice/games. I know her family is partial to the taco salad in a bag idea, but I think she had some other options as well. I know I personally would enjoy the “exciting picnic” aspect of dinner for a season than having to eat late or come home to rush dinner.
