It felt good to have a menu plan last week, even if I didn’t follow it exactly because we got to hang out with some friends we usually don’t see (it was fabulous!). We still ate healthy, for the most part, and saved money, which are my biggest goals when it comes to the menu plan. Here’s what I’ve got planned for this week:
Monday – Roast Beef Hash (using leftover frozen roast beef), Fried Eggs, Fruit, Biscuits (I’m getting better at them – they’re actually kind of fluffy!)
Tuesday – Farfalle w/ Cauliflower & Turkey Sausage
Wednesday – Miso chicken, Rice, some kind of vegetable
Thursday – New England Clam Chowder, Slow Cooker Style
Friday – Fish sticks, broccoli slaw
