
On my to-do list this week is making a menu plan for the entire month of May. I’m a little daunted again, but having experienced the benefits of planning more than a week’s menu, I’m confident it will be a good thing. But in the meantime, here’s what we’ll be having this week:
Monday – Roast Beef Hash, Creamed Spinach, Garlic Butterhorns, Fruit crisp
Tuesday – Breakfast (waffles, bacon, eggs, fruit)
Wednesday – Sardine Cauliflower Pasta, some kind of veggie
Thursday – Pan Bagnat, Fruit, Cookies
Friday – Udon or Soba with vegetables
Saturday – ? {not sure of our plans yet}
Sunday – Dinner out
