
Now that I’m feeling better, I can get back to making a menu plan. I’m also going to try a two-week menu plan to start April, and then maybe I’ll get ambitious enough to try a month-long menu plan for May.
Here’s what’s on tap this week:
Monday – Dinner out
Tuesday – Tex-Mex Pasta Salad, Cornbread
Wednesday – Pan Bagnat, Three-Bean or Antipasto Salad
Thursday – Corned Beef with Cabbage and Potatoes {didn’t get to this on St. Patrick’s Day}
Friday – Spinach Turnovers, Pureed Cauliflower
Saturday – Breakfast {Pancakes, Sausage, Eggs, Fruit}
Sunday – Dinner out
