  • Menu Plan Monday: 10/17/11

I am really excited about the cooler weather we’re getting, after it hit 100 degrees again last week. I am realizing just how much I enjoy using my oven, LOL! Here’s what’s on tap this week:

Monday – Stuffed Acorn Squash (using leftover pork and rice)

Tuesday – Roasted Cauliflower & Sardine Pasta

    Wednesday – Dinner out

    Thursday – Sandwiches

Friday – Chili con carne (didn’t get to it last week)

Saturday – Calamari, Roasted Butternut Squash

    Sunday – Dinner out

See more weekly menus at I’m an Organizing Junkie.

    1. Great menu plan, totally intrigued by the sardine pasta, wonder if my kiddos would eat it?

My oldest who’s 6 loves this, my younger one who’s 4 doesn’t like it (yet!). Give it a try – you never know 🙂

    2. Your meal plan sounds delicious! Following you over from MPM!
