
I really don’t feel like creating a menu plan for this week. But, that’s exactly why I want to – because it will keep me from standing in the kitchen all week wondering what on earth I’m going to make for dinner. Plus, it will help keep me on track with my financial goals by limiting how much we spend on food, while also helping us to eat healthy. So here’s what I’m thinking, although it’s definitely subject to change:
Monday – Mexican Pie, salad with lots of avocado
Tuesday – Couscous with Scallops
Wednesday – Kalua pork, sauteed green beans
Thursday – Grilled Pizza
Friday – Pumpkin pancakes, bacon, eggs
Saturday – Chili con carne
Sunday – Dinner out

Pumpkin Muffins
Pumpkin Pancakes
