
I did pretty well last week with the pantry challenge, although there were some lunch obligations so instead of eating leftovers for lunch, we had them for dinner the next night. So I didn’t get through my whole meal plan, which is fine. I’m just shifting last Wednesday’s meal to this week:
Monday – Grilled pizza using artisan bread dough, salad
Tuesday – Summer Couscous Salad with Shrimp
Wednesday – Roasted chicken, garlic sauce, sauteed green beans
Thursday – Mexican “pie” (layers of tortillas, refried beans and cheese); avocado and mango salsa; salad
Friday – Breakfast (waffles, bacon, eggs)
Saturday – uncertain
Sunday – Dinner out
