  • Menu Plan Monday: Eating out less

    I have to admit, we’ve been eating out a little more than I’d like, and it’s because I haven’t been following my menu plan that closely. I think that’s because I type it up on my computer at my desk, but then don’t actually write it on the dry erase board I keep in the kitchen. Obviously, that’s changing starting this week.

    Monday – Roast chicken, flat bread, lemon-garlic sauce, sauteed green beans (this never got made last week because I forgot to defrost the chicken, and that was because I didn’t write it down . . .)

    Tuesday – Rice, miso cod (misoyaki) or beef shabu shabu, some kind of vegetable (I’ll be near the big Asian market this day – yay!)

    Wednesday – Chicken enchiladas using some of the free Philly Cooking Creme I picked up last week (thanks for the idea, Rebecca!), salad

    Thursday – Pizza using artisan bread dough and fresh mozzarella cheese, salad

    Friday – Breakfast: waffles, eggs, bacon, sauteed cabbage (caramelized like onions)

    Saturday – BLTs, sweet potato fries

    Sunday – Dinner out {this is a weekly thing at someone’s house and doesn’t count as “eating out” in my book ;)}
