
You’re reading this on Monday, but I’m actually writing it on Saturday, because I tend to hit Trader Joe’s on Sundays, and I realized that planning my menu on Sunday night meant I was often missing something I needed from TJ’s that week. For instance, this week’s roast chicken dinner goes with flatbread that I get at TJ’s, but not planning my menu before I go shopping means I probably wouldn’t get it. So I’m trying to make planning my menus on Friday or Saturday a habit.
Monday – Rice, salmon “furikake”, sauteed bok choy
Tuesday – Chicken pot pie, using frozen cooked chicken, and biscuits instead of pie dough
Wednesday – Shrimp scampi with angel hair pasta, steamed broccoli
Thursday – Corn bread taco casserole (cornbread topped with seasoned ground beef and melted cheese); salad
Friday – Roasted chicken, flat bread, garlic sauce, some kind of veggie
Saturday – Breakfast: waffles, bacon, eggs, sauteed cabbage
